THE
BRICK KITCHEN? How
do I even begin to describe the experience? How do I express how blessed I feel
to have felt this in the middle of a global pandemic? Despite all the fear and
anxiety surrounding the entire world, for a few minutes, I was surrounded by
sheer calmness and gratitude. Gratitude for this opportunity to taste the
masterful creations of locally and internationally awarded, decorated, and
renowned pastry chefs and culinary experts. They are indeed the best of the best.
Their cakes? Oh, let me count the ways…
First in
line would always be the TBK Brazo de Mercedes. When they said that this was an
all-new Brazo experience, they were serious. As I took a bite, I remembered the
many times I would fight over the edges of the usual roll that it comes in. All
I wanted was to have plenty of that sweet filling that satisfied my young
palate. This time, however, it feels like anticipation for you wait for that
over sweetness from that yellow goo. Alas, there was none…the taste was just
right. Not overpowering at all, and it does not leave you wanting for more as
well! You may say I have matured in taste but medically speaking, this brew is
just right for me.
As a child, I used to really hate pastries and desserts that come in the ube flavor—ice cream, cakes, rolls, bread—it was an aversion that I couldn’t and wouldn’t explain. I mean, I loved ube hopia and the halaya, but I really could not eat other stuff in the ube flavor. Growing up, I was very picky with sweets in that flavor. Recently though, I have begun to explore the famous ube-cheese pan de sal and I was surprised to have enjoyed it. I now see what I have been missing for such a long, long time! I have started eating ube cakes and ice creams and I like them just right. This one though, the TBK Ube Trifle, just amazing! If only I could turn back time, this would have been my preferred first taste of an ube cake! That way, I would not have rejected the flavor for such a long a time. No regrets because TBK’s Ube Trifle has more than made up for the many years that I avoided the ube cake. This one just hits the bullseye!
Now, this is one that
really got the mark! TBK’s Barako Cappuccino Cake. It’s one of the greatest ways
to pay homage to our coffee farmers. The taste really brought out the best from
the beans and the flavor is just right! Not too sweet, not bitter at all as one
would expect from coffee being infused into a dessert. For many years, I used
to be a three-in-one girl when some friends convinced me that brewed coffee
really does make the drink and the time more rewarding. This is exactly what I
felt with this treat! A more rewarding and fulfilling cake experience that
keeps the eyes wide awake because the jolt of delicacy and all the flavors just
soothes all the hours spent with work. It is worth all the money that goes to
it. This is one gentle barako that would never be forgotten. It is such
a classic!
The finale for me is
TBK’s Socorro Concorde!!! Why not? My second name was taken from one of the
greatest public-school teachers that I know—my grandmother! She was a Socorro and she really is
one unique lady who lived to almost a hundred and five. That is how timeless
chocolate cakes are and I couldn’t help but get nostalgic and emotional with the
Socorro Concorde because just like my Lola, it is one timeless beauty! From its
toppings to the rich and decadent mix, all that one can ask for in a chocolate
cake! They are all there—waiting
to be experienced, waiting to be enjoyed, waiting to never be forgotten—as my namesake. I feel so much love as I enjoyed it
one bite after the other, not wanting to waste any small piece of my cake! It
is simply, divine!
